
Uttapam
Ingredients :
- 3 cups rice
- 1 cup urud dal
- salt to taste
- 1/4 tsp baking sada
- Finely Chopped onions, tomatoes, green chillies, ginger, cilantro leaves for topping.
Method :
- Soak rice and dal seperately for 5 - 6 hours.
- Grind rice and dal coarsely and mix together in a big vessel.
- Keep it for fermentation for 10 to 12 hours depending upon temperature outside.
- When the paste is raised upto top in the vessel, the paste, to prepare uttapam is ready.
- Add baking soda and salt to the paste according to your taste.
- Heat a Tawa(Flat Pan) and wipe with a damp cloth with oil and water.
- Pour1or 2 tbsps of paste in the center of the pan and spread into a thick circle.
- Now on top of the circle sprinkle chopped onions, chopped tomatoes, chopped green
chillies,finely chopped ginger and a little bit of chopped cilantro leaves.
- Spread little oil around the circle.
- Press all the toppings little bit with the help of laddle.
- Turn it over when it is golden-brown at the bottom side.
- Now when it becomes golden from the other side too, take it out from pan.
- If you want you can sprinkle a little bit of chat masala or any other spicy masala on
top of it.
- Serve it hot with Sambar, coconut chutney, tomato chutney.
