Sambar

Roasted Gram Sambar

Ingredients:

  • peeled small onions - 1/2 cupsambar.jpg (6884 bytes)
  • tomatoes - 3 medium sized
  • turmeric powder - 1/2 tsp
  • salt - as required
  • sugar or jaggery - optional

Fry and powder:

  • dhania - 1 tsp
  • red chillies - 8

Method:

Powder separately:

roasted bengal gram - 1 1/2 Tbl.sps

  • Chop onions and tomatoes.
  • Heat little oil and season with little mustard seeds.
  • Add onions and then tomatoes.
  • Fry well and pour water with salt and turmeric.
  • Boil till raw flavour is lost.
  • Add ground mixture of dhania and chillies.
  • Boil for few more minutes.
  • Just before removing from fire add gram powder which is made into a paste with water.
  • Garnish with curry leaves and coriander leaves

Green Gram Dhal Sambar

Variation :

Use whole green gram in place of dhal.  Soak in water for 10 hours. Pressure cook, mash little and do the sambar.

 

 

Tomato Sambar

 

Ingredients:

  • cooked red gram dhal - 1/2 cup
  • turmeric powder - 1/2 tsp
  • salt - as required
  • curry leaves & coriander leaves - 2 Tbl.sps
  • tomatoes - 2 (chop into cubes)

Fry in oil and grind together:

  • cumin seed - 1 tsp (jeera)
  • green chillies - 7
  • chopped tomatoes - 1/4 cup (grated fresh coconut - 2 Tbl.sps)
  • add coconut while grinding

Method:

  • Mash dhal well.
  • Add other ingredients with ground paste and enough water.
  • Boil till raw flavour is lost.
  • Garnish with curry leaves and coriander leaves.

    Coconut Sambar

     

    Ingredients:

    • big onions - 2
    • tomatoes - 3
    • green chillies - 6
    • salt - as required
    • turmeric powder - 1/2 tsp

    Grind together:

    • grated fresh coconut - 3 Tbl.sps
    • cinnamon - 1 inch piece
    • poppy seeds - 2 tsps
    • roasted gram - 1 Tbl.sp

    Method:

    • Chop onions, green chillies and tomatoes lengthwise.
    • Heat little oil, season with mustard seeds, curry leaves and fenugreek.
    • Add chillies, onions and after sometime tomatoes.
    • Fry well till raw flavour goes.
    • Pour water with salt and turmeric powder.
    • Add ground paste just before removing from fire.


    Sambar Powder

     

    • Coriander seeds- 1/2 cup
    • Asafetida- 1 tsp
    • Red chilies- 5
    • Curry leaves- 5
    • Channa dhal- 2 tablespoons
    • Urad dhal- 2 tablespoons
    • Whole black peppers- 1/2 tsp
    • Fenugreek seeds- 2 tsps
    • Mustard seeds- 1 tsp

    Dry roast the 1st four ingredients and set aside. Roast the other ingredients one by one separately (Be careful not to burn them). Grind all the roasted ingredients together to a powder. And store in an airtight container
