Moongfali (Groundnut) Potato Vegetable

 

Preparation Time : 15 min.
Cooking Time : 20 min.
Serves / Makes : Serves 4.
 
  • 1 teacup peanuts
  • 3 potatoes, boiled
  • 1 teaspoon sesame seeds
  • 1 teaspoon cumin seeds
  • 2 green chillies, finely chopped
  • a pinch asafoetida
  • 3 curry leaves
  • a pinch sugar
  • 2 teaspoons lemon juice
  • 2 tablespoons oil
  • salt to taste
For the topping
  • chopped coriander

Main Procedure

 

1. Soak the peanuts in water for 4 to 5 hours. Boil them until soft. Drain and keep aside.
2. Heat the oil and fry the sesame and cumin seeds until they crackle. Add the green chillies, asafoetida and curry leaves and fry for a few seconds.
3. Add the peanuts and fry again for a few minutes. Add the potatoes and sugar, mix well and fry. Add the salt and lemon juice and mix well.
4. Serve hot topped with chopped coriander.
