Jaipuria Vegetable
Preparation Time : 10 min.
Cooking Time : 15 min.
Serves / Makes : Serves 6.

Ingredients:

  • 2 teacups mixed boiled vegetables (carrots, french beans, cauliflower, green peas)
  • 2 bay leaves
  • 4 cloves
  • 1 onion, finely chopped
  • 150 grams fresh cream
  • 2 tablespoons oil
  • salt to taste

 

To be ground into a green paste
  • 3 green chillies
  • 12 mm. piece ginger
  • 3 cloves garlic

 

For the white sauce
  • 50 grams khus-khus (poppy seeds)
  • 1 tablespoon broken cashewnuts
  • 5 tablespoons milk

 

To be freshly ground into a garam masala
  • 1 small piece mace (javantri)
  • a pinch nutmeg
  • 2 cloves
  • 2 cardamoms
  • 12 mm. stick cinnamon
  • 1 bay leaf
  • 2 peppercorns
  • 1/2 teaspoon cumin seeds

 

Procedure
1. Cut the paneer into small cubes.
2. Heat the oil, add the bay leaves and cloves and fry for 1 minute. Add the onion and fry until light brown.
3. Add the green paste and fry for 2 minutes.
4. Add the white paste and cook for 3 to 4 minutes.
5. Add the cream and garam masala and cook for 2 minutes.
6. Add paneer, vegetables and salt and cook for 3 to 4 minutes.
7. Serve hot, topped with a little cream.
